Like every celestial body not made of solid material, Sun has not sharp edge. Those bodies looks sharp becase of optical illusion. Because they are usually HUGE and we can’t see all what is there for several reasons. F.e. Jupiter is made mostly of transparent gases and has its color because it is polluted by other material. On Sun there is huge contrast of material with different temperatures (bot on surface and above it). So it is hard to see the whole “turth”.
Sun is not made of gas though. Well … it is made mostly of hydrogen but hydrogen is gas on Earth, not on Sun. It is in form of plasma, which means in form of atoms without electrons. Elements looks all same when in form of plasma. They differs mainly in weight (count of protons and neutrons). As plasma, atoms are without electrons and thus are not neutral and have electrical charge. It means they do reacts to Sun’s extremly complex magnetic field (which evolves quite violently in time). This causes eruptions which can be small or very huge. Those events somewhat shapes the “surface” of the Sun, as Jonathan Devor explained in better detail here in one of the answers.
